- Start by preheating your waffle iron.

Ingredients
- 2 cups flour
- ¼ cup brown sugar
- 1 tbsp baking powder

- ½ cup butter, melted
- ½ cup plain yogurt
- 3 eggs yolks
- 1 tsp vanilla
- 3 egg whites
- 3 bananas, mashed
- ½ cup chopped walnuts

- In a separate bowl, whisk together the milk, butter, yogurt, egg yolks, banana and vanilla. Add this mix to the flour mixture.
- In another bowl, whip the eggs whites until they hold stiff peaks. Gently fold the egg whites and nuts into the batter.
- Heat your waffle iron and drop approximately ¼ to ½ cup of the batter for each waffle.
